29 Aug 2011 To set your exposure using the aperture, depress the shutter release button until the meter is activated. Then, while holding down the Exposure Compensation/Aperture button (located behind and to the right of the shutter release button), rotate the Command dial to change the aperture.
To use Manual mode, select M for manual, then use the command dial to select shutter speed and press the "aperture/exposure compensation" button to select the aperture. Adjust the shutter speed or aperture so that the exposure indicator is centered and gives you optimum exposure.
I do like being able to change ISO with wheel when pressing Fn key. If I am understanding your question . . . you are asking how to change the exposure compensation setting while the camera is in manual exposure mode (M). When I need to do that on my Nikon D5100, and it is set-up for manual exposure
"Exposure compensation" is the act of deliberately altering exposure from the value suggested by the camera to make pictures brighter or darker. Although in P, S, and A modes, the camera automatically adjusts exposure, the value it selects may not always produce the results you intend. Everyone has her own preferences

Nikon's flash exposure is usually perfect. If you want to change the brightness of just the flash alone, press and hold the flash button (on the
Exposure compensation button top. allows to set a positive or negative exposure compensation together with the command dial for brighter or darker pictures. Nikon D5100 AE-L/AF-L button. AE-L/AF-L button back. locks the currently measured exposure (unless custom setting menu f2 defines another action for this button).
1 Jul 2011 However, there is a “work-around" for this shortcoming of no full manual exposure control with the Nikon D5100. To manually set your shutter speed, you must set the camera on Shutter-Priority Auto Mode (S) and set your desired shutter speed before going into Live View mode, use exposure compensation
Note that in Manual exposure mode, the EV button becomes a shift button that changes the function of the Command dial from controlling the shutter speed to changing the Aperture. The Auto Bracketing feature on the Nikon D5100 takes three shots of the same subject with varying exposure values.
