I found this in a Pilsbury Hamburger booklet. I think it would be great subbing in some beans for the hamburger so it would be meatless.
30 Jan 2012 . I love this chili. It's an amazing way to get a major hit of vegetables. Smokey, thick, and delicious with a topping of shredded cheese and some.
Roasting the vegetables adds sweet, smoky flavors to the chili; the roasted squash thickens the sauce. Add shredded rotisserie chicken for extra protein.
Directions. Place the squash, carrots and zucchini in a 15x10x1-in. baking pan. Meanwhile, in a stockpot, saute green peppers and onion in remaining oil for 3-4 minutes or until tender. Stir in the broth, tomatoes, beans, water, salsa, chili powder and garlic. Stir in roasted vegetables. Return to a boil.
This is a brilliant alternative to the classic chilli con carne; it's packed full of vegetables . Stir the roasted sweet potato through the chilli with most of the coriander.
