Broccoli And Cauliflower Soup
Making broccoli and cauliflower soup has to be the easiest way to get loads of veggies into your children. Serve with butter or cream cheese.
In a stockpot, combine chicken broth, onion, cauliflower, and broccoli. Bring to a boil and reduce heat to low. Continue to simmer until vegetables are tender. Season with curry powder, chicken bouillon, salt, and pepper.
Cut broccoli and cauliflower into florets. Combine onion and garlic in a large saucepan with 1 tablespoon water, stir constantly over heat until onion is soft. Add remaining water, stock cube, potato, celery, broccoli and cauliflower. Bring to boil, reduce heat and simmer for 10 minutes or until potato is tender.
