Aug 26, 2009 Grilling. If you want to use the the grilling feature of the Brinkmann Smoke'N Grill, remove all of the inner parts of the smoker. Place a grill on the lowest bracket and rest the charcoal pan on top of it. Light the charcoal and let it sit until it is lightly covered in ash.
Remove dome lid, cooking grills, water and charcoal pans from smoker body and set aside. 2. Place a drip pan/ash guard or its equivalent under the grill to catch embers, ashes or drippings. NOTE: Heavy-duty aluminum foil folded several times can be used as a drip pan/ash guard.
