(I love this question) it took me 3 months to confirm that his birthday is Febuary 3rd 1905. he turned 100 in 2005... even though it makes me sad that he's so old now xD
Actually, Ed was born in 1899 as there is a 6 year difference between the alchemic world and ours. It's stated early in the series (in the subtitles I believe) that Ed and Al attempted to resurrect Trisha in 1910 when they were 11 and 10 years old respectively. From that information alone you can figure Ed was born in 1899. As to when his exact birthday is, it's assumed he was born in late winter so you may be right about it being in February. :) (wich day i cant tell)
