Specifically, each page (after being split) is 421 points wide by 595 points high. Acrobat resized the cropped section to a full page and as far as I can tell, the document is good.
Your best route would be to make such changes on the source file of your booklet and print it from there (either to a printer or to a PDF). If it is not possible, you might try the following: duplicate the 2-page spread and then crop the left side and then the right side on the duplicate document.
