There was a time that for every pdf file you opened on an android phone each pdf file had its own recent app tab. Now for some reason these "geniuses" thought it was a great idea to have only one pdf file open at a time. So opening one pdf file will replace any previous pdf files might have had open. Yeah
To answer my own question: while I haven't found a completely satisfactory solution to this problem, I have discovered in Adobe's Reader app the "Recents" list - which shows recently read documents in the descending order of last-opened date.
