This peach bellini recipe is basically bubbly booze poured over a sweet peach puree. The Italian version of a mimosa is easy like (late) Sunday morning.
Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Place 2 tablespoons of the peach puree into each Champagne glass and fill with cold prosecco. Serve immediately.
How to mix. Whip up your peach puree just peel and blend the peaches, then strain it strain and refrigerate until cold. Mix 2 parts of peach puree with one part of sugar syrup. Add about 20ml of the peach puree mix to your Champagne flute, then gently pour Prosecco into the glass.
Directions. Stir the sugar and water in a large saucepan over medium heat until the sugar dissolves, about 5 minutes. Puree the peaches and orange peel in a blender with 1 1/2 cups of the sugar syrup until smooth. For each serving, pour 2 to 4 tablespoons of the peach puree into a Champagne flute.
The classic bellini cocktail combines peach juice with sparkling wine for a refreshing Italian-inspired beverage.
