Alright, I recently tried my hand at building a sword and board character with a focus on defense. It's, at the moment, a 1st level human paladin. Should I try and do more damage with some shield bash feats or is my idea actually viable for a holy healing tank kind of thing? Any advice at all would be good.

When weilding a shield you give up damage, so you want to have some other tool for being effective. This is where taking some controller focused options are very powerful. I would suggest using a Flail, or some other weapon that you can trip with, then picking up the feats Combat Expertise, Improved Trip, Combat
IMHO you need a lot of feats to make an effective sword and shield fighter in Pathfinder, due to the lack of a threat mechanic. You really need to be able to dish out damage to make the enemies not want to avoid you. Not that you were suggesting it, but I think there is no point in getting your AC up to 50,
