I don't really remember if you're required to fly for any of the 3.0 MSQ (Except Azys Lla). Yes, if you go to actions -> main commands -> aether currents, you can see which field and quest currents you already have. Also If you've found guides for the Aether Currents, the quest ones are all still the same.

In certain Heavensward and Stormblood zones, attuning to Aether Currents will allow certain mounts to fly. Some Aether Current are rewarded for completing quests, and others are found in the field. Attuning to all Aether Current in a zone will allow for flight.
