If you're using the crappy ps3 controller, pull immelmans instead of trying to turn or stopping. Every time I'm closing on something and I'm about to overshoot, I just pull an immelman and i'm right back on the target for another pass and just keep repeating. The problem is if there's a lot of AAA you'll get shot down eventually.
