Sure it is possible. People have done it successfully. Check the Forester forums for more specifics. But it should be identical to going from auto to manual in an Impreza. The auto probably has a different ratio than the manual for the front ring and pinion, so you would have to swap the rear diff with the transmission if you did an auto to manual conversion.
