This is called AEB (Auto Exposure Bracketing) shooting. You can set your camera so that the shutter speed and aperture value are changed automatically to capture three successive shots with exposure bracketing of +/-2-stops in 1/3-stop increments.
Exposure bracketing is possible with any camera which allows you to set the shutter speed and aperture manually, or which provides some form of exposure compensation. You take a number of pictures, shooting one exposure at the settings recommended by the camera, then additional pictures at different exposures.
When you are in an automatic mode, you adjust 0, 1 or 2 of these three and the camera determines the rest. The point is that there is at least one left. Exposure-Compensation shifts how the camera sets the parameters it controls. If it cannot control anything as in manual mode, there is nothing to shift.

Go into your cameras menu settings and find the option for AEB. On a Canon 5D Mark II for example, AEB is located under the second menu screen, and is labeled “Expo.comp./AEB." To change from one exposure to three, highlight the menu setting, click the SET button, then turn the dial on top of the camera to the right.
