Heat large heavy skillet over medium heat for 5 minutes. Place beef steaks in skillet and cook 8 to 10 minutes for rare (140°) to medium (160°), turning once. Meanwhile, dissolve cornstarch in broth in small saucepan. Bring to boil and cook until slightly thickened, about 1 minute. Stir in thyme and bay leaf.
12 Aug 2017 Put your oven to work. After searing, place the skillet in the preheated oven at 400 °F. Over the top of your steak, spoon an additional nob of butter. Every 60-90 seconds, baste the steak in the butter until it is 5 °F below your desired internal temperature. Remove from oven.
The cooking times below are in minutes and based on using fully thawed steaks. Gas or Red Hot Charcoal Grill - Preheat the grill on high. Lightly oil and season steaks. Refer to cooking times below. Allow 3-5 minutes resting time before serving. Apply finishing sauce or glaze if desired.
Sear Roasting – Preheat oven to 300?F. Heat a small amount of oil in a large ovenproof pan over high heat. Sear meat for 2-3 minutes on first side or until well browned. Flip meat; then place in preheated oven. The cooking times below are in minutes and based on fully thawed steaks or chops .
