So if you're viewing a PDF and want it opened in Preview instead of Safari, just hit Cmd+A or 'Select All' from the Edit menu, now right-clicking shows you the 'Open with Preview' option again.
If Adobe Acrobat or Reader is installed on the system, it should open in Acrobat/Reader automatically. Only if Acrobat/Reader is not installed will Safari use the system's default PDF viewer (Preview.app). When a pdf file opens on my computer in Safari, it opens with Adobe Reader (v. 7.0.8). Until recently, I could right-click on my mouse and and a drop-down menu would appear with the option to open the pdf file in Preview instead of Adobe. That option has now disappeared from the drop-down menu.
