If Adobe Acrobat or Reader is installed on the system, it should open in Acrobat/Reader automatically. When a pdf file opens on my computer in Safari, it opens with Adobe Reader (v. 7.0.8). Until recently, I could right-click on my mouse and and a drop-down menu would appear with the option to open the pdf file in Preview instead of Adobe. That option has now disappeared from the drop-down menu.
