May 21, 2014 From this guide that lists all limited availability items at the bottom, it looks like there are actually no missable boss items that you can steal. All limited items that you are able to steal from bosses are also available in chests or in the area.
The bosses of certain quests also have similarly limited equipment which needs to be stolen during the fight, though at least one copy of every item in the game is available simply through killing them (there's nothing unique to stealing, it just allows you to get multiples of some limited equipment). For Bravely Default on the 3DS, a GameFAQs message board topic titled "Missable content? Permanent 3 years ago#2. Steal from all the bosses. ^.^ Also as there is New Game +, nothing is lost and even those explicit OR things can all be gotten in subsequent playthroughs for filling the lists up.
Sidequests are missable. Each of these bosses is presented multiple times, so if you miss the first sidequest that has a boss, you can pick the job up the next time that boss comes The only thing you lose from not doing the side quests are the job classes and any stealable items if your trying to compete D's Journal.
First and foremost, you can't unlock everything in a single playthrough. You need at least 4 playthrough for 100% side-events and skits. Said that, skits are easily missable. A few items may also been (steal from every Boss, just for be sure), surely duplicate of rare/exclusive equips are missable for the same
Not miss per se, but Kikyo has a Kunai that is limited quantity to Steal. Other than that, it only gets interesting in chapters 5+. Don't forget the Thief Ability Rob Blind, which lets you steal two of any item. My guide has an extensive list of what limited items are steals / drops at the very end, though it might be a bit spoilerish to
I don't know how to answer without spoiling, but yes, there are items that can be missed if you don't steal from bosses, so make it an habit, despite the first items being sold by stores later in the story, at some point you will have the occasion to steal different, better items from those same bosses.
