This is my take on Pollo a la Brasa, the delicious spit-roasted chicken made popular by so many Peruvian restaurants. The chicken is first marinated in olive oil,.
Marinade. 1/2 cup vegetable oil. 1/4 cup fresh lemon juice. 1/4 cup white wine vinegar. 8 large garlic cloves, coarsely chopped. 1 teaspoon turmeric. 1 tablespoon hot paprika. 1/2 teaspoon ground cumin. Salt and freshly ground pepper.

Marinate chicken: Blend soy sauce, lime juice, garlic, cumin, paprika, oregano, 1/2 teaspoon pepper, and oil in a blender. Put chicken in a large sealable bag and add marinade. Seal bag and marinate, chilled, 8 to 24 hours.
3 Jun 2018 . Prepare marinade: In a blender or food processor, mix together the garlic, mint, cumin, sugar, paprika, chile pepper, oregano, aji panca paste, sazon goya, vinegar, soy sauce, juice of the third lime, and vegetable oil. Process until smooth. Season with salt and pepper to taste.
