Directions. In a large skillet, cook the sausage over medium heat until no longer pink; drain and set aside. In the same skillet, saute the mushrooms, onions and celery in butter until tender. Stir in the sausage, parsley, thyme and pepper. Transfer to a greased shallow 2-1/2-qt. baking dish.
Packed with flavour and texture, this stuffing is low in fat and high in fibre and carbohydrate. Stuffed into a bird, or baked alongside, it enables you to serve.
