Jul 5, 2015 . Ingredients. 4 large chicken breasts. 1/2 cup crunchy peanut butter. 1/4 cup soy sauce I use low sodium GF Tamari Soy Sauce. 1/4 cup honey. 1/4 cup rice vinegar. 1/2 cup chicken broth. 3 large garlic cloves minced. 1 tbsp crushed red pepper optional.

Delicious flavorful chicken dish that is as fast and easy to make as it is tasty! All amounts are approximate and can be tweaked to suit your tastes, I typically make.

Method. Heat 1 tbsp of the oil in a deep frying pan over a medium heat. Brown the chicken in batches, setting aside once golden. Stir in the peanut butter, coconut milk and tomatoes, and bring to a simmer. Serve with the remaining coriander, roasted peanuts and rice, if you like.

Season with salt and pepper. Cook, stirring constantly until onions are translucent, about 5 minutes. Pour the tomatoes and chicken stock into the skillet, and simmer for about 10 minutes, or until chicken is cooked through. Stir in peanut butter, and cook stirring constantly until the sauce thickens.
